A classic homemade garlic hummus recipe, made by simmering chickpeas with baking soda, blending with tahini, lemon juice, garlic, cumin, salt, and cold chickpea juice for a smooth and creamy dip.
1. Place the drained chickpeas and baking soda in a pot and cover with water.
2. Simmer for 5 minutes. Remove from the heat, drain them and rinse then place them into fresh cold water.
3. Give them a rub to get the skins off. The skins should float to the top of the water and then you can skim them off.
4. Place the cooked chickpeas into a food processor with olive oil, garlic, cumin, lemon juice, and salt. Blend until mostly smooth, but a little chunky.
5. After 5 minutes, add the tahini and then continue blending until smooth.
6. While the machine is still running, pour in the cold chickpea juice until desired thickness is reached.
7. Serve with some pita, olive oil and smoked paprika to garnish.
