A spicier, more flavorful take on the McDonald’s classic McRib, featuring a rich, umami-packed Gochujang BBQ sauce and homemade pork patties served on a toasted roll with classic toppings.
Combine Gochujang BBQ sauce ingredients (Gochujang, pear, ketchup, rice vinegar, brown sugar, soy sauce, pickle juice, sesame oil, ginger, garlic) and use an immersion blender to blend until smooth. Season to taste with salt, then set aside.
Mix together ground pork, with white sugar, and salt.
Divide the pork into roughly 4oz portions (or large enough to fit the size of your bread) and form each portion into a rectangle. Then, use your fingers to create little indentations that make it look like “ribs.”
Freeze the patties until they can hold their shape (~1 hour). Then, cook the pork over medium heat until browned and cooked through. Basting to ensure the top is cooked.
Once cooked, turn off the heat, and ladle over the gochujang bbq sauce, ensuring the patty is sufficiently covered.
Spread some butter on a toasted roll, then place the pork on the roll. Top with sesame seeds, pickles, fried onion, and chives.
